One of my favorite herbs loaded with nutritional benefits is the commonly known "weed" - Dandelion.
It always blows my mind that so many people spray their yards with toxic chemicals to exterminate these vibrant, little beauties. I have been harvesting them the last couple years, and I love experimenting with every part of the plant!
The leaves can be added to salads or made into tinctures or teas.
The roots can also be made into tinctures or teas or they can be dried and made into a healthy coffee alternative.
The stems can be added to herbal concoctions like pesto or sauteed and added to dishes like stir fry.
The flowers, themselves, can be used in so many ways...any of the above, made into fritters, used in homemade lotions and balms, infused into honey, made into wine, and my personal favorite - used as a natural ice cream flavoring!
