I would love to get a thread going of some favorite campfire recipes. A personal, really easy, favorite of mine is campfire nachos. At my park, all the rangers would get together and load up a huge cast iron pan with tortillas, salsa, fresh peppers and onions, garlic, tons of seasonings, and a big helping of guac. We’d let it sit over the fire for a bit, getting crispy and melty, and then dig in. There wasn’t a formal recipe, we’d all just eyeball it and improvise, but they were some of the best nachos I’ve ever had. It became a regular delicacy for us. What are some things that you love to make on the fire?

Campfire apple bombs- easy fun campfire desert.

Any apple will do. Maybe a fresh green, granny smith. Or maybe a slightly beaten-up, seen-better-days-apple that has lost some of its zing. 

  1. decore an apple. 
  2. fill the cored-out apple with some butter + cinnamon, sugar, maple syrup, agave, honey, chocolate...literally any combination of butter + sweet things that sounds good.
  3. wrap it securely in aluminum foil. 
  4. chuck it in the fire, preferably on the side, in a bed of coals.
  5. roast it for 10-15 minutes, periodically rotating the apple.
  6. after roasting it, take it out, slice it into pieces, and enjoy.

Mountain pies! It always surprises me how many people don't have these in their area, but where I grew up, they were so popular that they were recreated in the oven and served in schools!

You just use one of those square cast iron sandwich cookers, often sold in most stores' camping sections. Oil the plates, one piece of bread on each side, pizza sauce on the bread, mozzarella cheese, and whatever other toppings you feel like in the middle...of course, classic pepperoni is hard to beat! You can get super creative with these and try different sweet and savory renditions.

My family actually has a tradition of doing a mountain pie cook-off on our camping trips! We've had some really creative ones- like jalapeno popper, lobster mac and cheese, and nutella strawberry with spongecake! As long as you have a fairly robust bread on the outside, you can get super creative with the fillings!!
